Pancakes for the Weekend

weekend-charlene-2I am so looking forward to breakfast tomorrow! I am wishing the day away and dreaming of food….sounds about right.

Saturday breakfasts deserve to be more special than the rest of the week I reckon. Its not often I have a weekend off so I like to make the most of it, especially as my plans have changed from house hunting to not a lot, basically! No work, small plans, I may not even leave the house…sleep is what I am looking forward to catching up on! So what better way to start the weekend than pancakes?

I don’t often have pancakes, I save them for Shrove Tuesday or holidays…..I may have had pancakes everyday we were on our honeymoon in America last year! Te he! But with this recipe you could literally eat them everyday (guilt free) so I am really excited to try it out!

Its easy to make and it only contains two ingredients! They’re healthy, full of protein, gluten-free, sugar-free, dairy-free and grain-free! Just Bananas and eggs, that’s all! Sounds too good to be true, right?

Well I am going to give them ago! I will report back and of course take photos to prove that these pancakes are physically possible. I keep on coming across this recipe in various places and as I’m taking part in the Blogilates Beginner Calendar they were suggested to have on the ‘rest’ day. Like a treat but healthy, init!

I’m really enjoying the Beginner’s Pop Pilates plan by the way. Sticking to the calendar at the mo and I’ve completed the first week’s workouts. I thought I’d be really tired getting up early every morning to fit in a work out but haven’t been. Not at the moment any way! Its a bit of an effort to get out at bed but once I get going I really enjoy feeling the burn! The work outs are short and Cassey Ho the creator of Pop Pilates is very enthusiastic and encouraging. She shows you a move and then offers alternatives if you find it too hard.

As I don’t have any big plans this weekend I may even have the chance to do some baking! This hasn’t happened for a while and I am feeling baking pangs, baking withdrawal even! I need to make a cake!! I really fancy making this incredible looking cake by Dieters Downfall.

This is one of those YOLO-diet-on-hold-quit-being-a-vegan-and-just-goddamn-eat-it-cakes…don’t you think?

I just hope it tastes as good as it looks. I try and eat pretty well but allow myself a treat everyday now and then and that is a treat and a half! So I want it to be really worth it and not just look amazing. It has got to be a taste sensation! I know how pleased my Box Office Buddies would be if I turned up on Monday with that bad boy. (Keep your fingers crossed chaps!)

I’d love to give this cake ago and then find away to make it gluten-free or diary free….wonder if that’s possible? Watch this space!
